Job Description

The Wentzel group of Spar’s are looking for an experience Bakery Manager to oversee each of our Bakery’s. We currently have 5 Bakery’s, one in each Spar.

  • Detailed knowledge of the various manufacturing processes used preparing fresh food dishes

Key Responsibilities

  1. Manage fresh food department targets and profitability
  • Meet sales targets
  • Ensure overall fresh food expenses are within budget
  • Ensure costing are up to date and accurate
  • Ensure claims are processed on time

 

  1. Control Stock
  • Set ideal stock levels per product category
  • Implement production chain system of all stock in the fresh foods departments to optimize shelf life
  • Set correct range to be available at the correct time of the day or week
  • Ensure wastage is Maintained within budget and ensure daily accurate records are made
  • Ensure stock transfers are accurately recorded on a daily basis
  • Set expiry dates and ensure stock is rotated on a daily basis
  • Ensure consistent quality in freshness and presentation
  • Spot check PLU’s to ensure accuracy on a daily basis
  • Ensure promotional products are in stock for the full promotional period
  • Design new products and recipes for the fresh food departments

 

  1. Buying
  • Identify ideal stock levels of all items purchased in the fresh foods departments and maintain these stock levels on an ongoing basis

 

  1. Point of Sale & Pricing
  • Spot check  fresh food products to ensure current neat and tidy prices are displayed
  • Ensure all signage & POS is accurate clean and tidy
  • Conduct spot checks to ensure accurate prices are being maintained

 

  1. Hygiene and Housekeeping
  • Ensure correct chemicals and procedures are used to maintain a sanitized and pest free environment
  • Ensure the fresh food departments comply with relevant food safety legislation.
  • Conduct spot checks to ensure that all display cabinets are clean and products are neatly displayed
  • Ensure all equipment is maintained according to manufacturer’s recommendations and in full working order.
  • Ensure all Production and back up facilities used are well maintained
  • Ensure cleaning schedules are designed and implemented per area and for all equipment and facilities on a daily basis

 

  1. Manage Staff
  • Ensure the fresh food departments comply with relevant labour legislation. (eg safety reps / first aid)
  • Ensure training of staff in the department in the following areas; Hygiene, Safety, Product knowledge, Manufacturing Customer Service
  • Ensure all staff are aware of the required work standards
  • Set Daily  / weekly schedules to optimize staff within budget, limiting use of casuals and overtime
  • Ensure staff uniforms are all maintained to required hygiene standards
  1. Manage customers
  • Develop a system to ensure that all customer orders are produced to quality standards in the correct time
  • Ensure customer complaints are resolved to the customers satisfaction
  • Advise customers on fresh food  products
  • Develop personalized relationships with regular customers

This position is available to Citizen’s and Non-Citizen’s, as a sign of professionalism only apply if you have more than 5 Years experience as a Bakery Supervisor or Manager. Applicant must be willing to move and live in Gaborone, Botswana.
