EXECUTIVE CHEF

Main duties and responsibilities:

• Assume full responsibility of the main kitchen,
• Maintain the highest level of standards in preparation of food items as well as the service thereof.
• Plan menus, costings, training and implementation of new menus
• Ensure all budgeted costs are controlled on a monthly basis, ie, control staff and set staff levels, control wage, portion control and spoilage control.
• Responsible for all related Health & safety standards ensuring that the company achieves 95% hygiene rating
• Strong guest relationships and customer service is essential
• Ensure training of kitchen staff is carried out, keeping training records and set training programs
• Ability to motivate, train and improve staff morale.

Minimum requirements

• Hotel school Diploma or equivalent in food preparation
• Minimum of 4 years’ experience as an Head Chef in a 3/ 4 star hotel/ operation
• Must have all round knowledge of food preparation, portion controls, costing and knowledge of menu planning Must have full knowledge of food production for banqueting and restaurant facilities.
• Must have knowledge of ordering, receiving, issuing and storing
• Must have knowledge of financials
• Computer literacy, Microsoft excel is a must
• Must possess good managerial and communication skills
• Knowledge of HACCP regulations will be an added advantage
