Executive Sous Chef – Chobe Game Lodge

Chobe Game Lodge is currently seeking qualified, experienced, knowledgeable individual to join our team for the position of an Executive Sous Chef.

EXECUTIVE SOUS CHEF

Brief job overview:

• To manage all food related activities of the Lodge under the guidance of the Executive Chef. Working in harmony with the Executive Chef and Food and Beverage Management.
• Developing new innovative culinary experiences for our guests that is relevant to our environment.
• Responsible for all food related expenditure, budgeting and purchasing of operational equipment and related administration.
• Maintaining high standards in hygiene, safety, operations and ECO principles that resonates well with our long term environmental sustainability strategy.
• Ensure a high standard of discipline, moral and work ethic amongst your employees.
• Take active part in our youth training program and in general lodge management with the rest of the management team.

Qualifications and requirements:

• Formal qualifications in Culinary Arts i.e a Certificate, Diploma, Degree or an equivalent qualification.
• Must have been working in a 4 or 5 star hospitality environment, internationally and nationally for a minimum of 10 years.
• Be fully computer literate and have excellent menu composition skills.
• Have strong training skills.
• Be able to multi task under pressure and have an uncompromising approach to excellence.
• It’s imperative that the applicant must have strong organizational and leadership skills, be able to motivate subordinates and maintain a positive working environment.
• Be highly innovative, methodical and a self-motivated individual. The applicant must enjoy working and living in remote bush environment.
