Key Responsibilities
- Menu Development: Design and implement innovative menus for fine dining, banqueting, conferencing, and large-scale outside catering.
- Kitchen Operations: Oversee daily kitchen management, ensuring food quality, consistency, and cost control.
- Team Leadership: Lead, train, and mentor a diverse culinary team, including hotel school trainees.
- Food Safety: Ensure compliance with HACCP, health, and safety standards.
- Budget Management: Control food costs, manage supplier relationships, and optimize profitability.
- Guest Experience: Deliver exceptional dining experiences aligned with 4-star service standards.
Requirements
- Professional Qualification: Diploma/Degree in Culinary Arts, Hospitality Management, or equivalent.
- Upmarket Hotel Experience: Minimum 8-10 years in culinary leadership, with at least 5 years as Executive Chef in a 4-star or higher property.
- Specialized Expertise: Proven track record in fine dining, banqueting, and large-scale outside catering.
- Training & Development: Experience mentoring junior chefs and collaborating with hotel schools.
- Business Acumen: Strong financial management, menu engineering, and supplier negotiation skills.
