Key Responsibilities

  • Uphold Five-Star Standards: Ensure the service delivery matches the rigorous, world-class standards of a luxury five-star property.
  • Guest Relations: Cultivate strong relationships with VIPs, regular patrons, and hotel guests, personally handling special requests and resolving any feedback with grace and diplomacy.
  • Ambiance Management: Maintain meticulous oversight of the dining room’s physical environment, including lighting, music, temperature, and table settings, ensuring perfect presentation at all times.
  • Recruitment & Training: Source, hire, and continuously train front-of-house staff on fine dining etiquette, order of service, menu knowledge, and luxury hospitality traits.
  • Mentorship: Foster a positive, collaborative, and motivated work environment, mentoring assistant managers, supervisors, and service staff to achieve career growth.
  • Performance Management: Conduct regular performance reviews, manage scheduling, and enforce grooming and behavioral standards.
  • Revenue Optimization: Maximize restaurant profitability through strategic seating management, upselling programs, and labor cost controls.
  • Inventory & P&L Oversight: Manage inventory controls for chinaware, glassware, linen, and beverages. Assist in monitoring the restaurant’s P&L, managing budgets, and forecasting.
  • Collab with Culinary Team: Work in tight alignment with the Executive Chef to seamlessly execute menu changes, wine pairings, and exclusive culinary events.

Requirements

  • Experience: A minimum of 3-5 years of management experience in a luxury fine dining restaurant, ideally within a five-star hotel or a Michelin-starred/critically acclaimed establishment.
  • Education: A Degree or Diploma in Hospitality Management, Business Administration, or a related field is highly preferred.
  • Beverage Knowledge: Strong knowledge of global wines, spirits, and mixology; a Sommelier certification (e.g., WSET or Court of Master Sommeliers) is a significant advantage.
  • Exceptional interpersonal and communication skills.
  • Sharp financial acumen and experience with restaurant POS systems and reservation platforms (e.g., Opera, Micros, OpenTable).
  • Flawless grooming and a professional, commanding presence.
  • Ability to work flexible hours, including weekends, holidays, and late evenings.
