Purpose of the job: Reporting to the Food Experience Manager (FEM), the Chef Trainer supports culinary teams across remote camps to develop skills, maintain consistency, and uphold Wilderness Food Experience standards. The role ensures high-quality guest dining experiences through training, coaching, and operational support in line with company systems and expectations.

Key Responsibilities

  • Culinary Training & Development: Train, coach and mentor chefs and kitchen teams in techniques, preparation and presentation; deliver structured training and on-the-job coaching; assess skills gaps and create development plans; support external training and development initiatives.
  • Menu & Product Standards: Ensure delivery of approved cycle menus to standard; train on recipes, portion control, plating and execution; monitor menu performance and report feedback; support recipe standardisation and menu development; maintain food cost and portion control targets.
  • Hygiene, Health & Safety: Ensure compliance with food safety and HACCP standards; conduct audits and ensure corrective actions; maintain clean and compliant kitchen environments.
  • Leadership & Team Support: Build strong relationships with camp teams and chefs; support underperforming teams through coaching; promote accountability and continuous improvement.
