Brief Description
A Kitchen Manager will be responsible for the overall operations for the kitchen area and is expected to share the responsibility with the executive chef. The Manager will be supervising the food preparations, cooking, maintaining a fully-stocked kitchen inventory and complying with the kitchen safety and cleanliness standards.

What will I be doing?
To be successful in this role, a Kitchen Manager will support the General Manager, and ensure that the kitchen staff is managed and guided to deliver quality food on time, to ensure all plates are properly cooked and served to our customers for a pleasant dining experience.
This post will be achieved through the following duties:
- Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards
- Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment;
- Supervise staff. Schedule kitchen staff shifts
- Assumes 100% responsibility for quality of products served
- Keep weekly and monthly cost reports
- Ensure staff is in compliance with the procedures, rules & regulations of the company and minister a prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures;
- Report maintance , hygiene and cleanness of the kitchen through maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas;
- Assist other departments wherever necessary and maintain good working relationships.
- Ensure food stuffs are stored correctly with labels at line stations to assure a smooth service period
- Able to Work with the Executive Chef and the General Manager to plan and price menu items for the restaurant and either in-house or outside functions requirements
- Assist in positive outcomes from guest queries in a timely and efficient manner
- Opens and Closes the kitchen properly and follows the closing checklist for kitchen stations.
- Prepare and record all required paperwork, including Front Stock Control Forms, Overtime forms. Rosters, etc;
- Ensure that all products are ordered according to predetermined product specifications and received in correct unit count , condition and deliveries are performed in accordance with the restaurant’s receiving policies and procedures;
- Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures
- Responsible for Dealing with in-house and outside functions, covering all aspects, from understanding the requirements of the customer, elaborating the proposal with the floor managers responding to the budget and the requirements of the Customers and implementing all the preparations required.
- Order food supplies and kitchen equipment, as needed
What are we looking for?
We are looking for a Kitchen Manager to supervise daily restaurant operations to have the following:
- A certificate/Diploma/Degree in Culinary arts or Food preparation
- A minimum of 3 years experience working as a Kitchen Staff
- Proven work experience as a Kitchen Manager, Restaurant Manager or Head Chef
- Hands-on experience with planning menus and ordering ingredients
- Knowledge of a wide range of recipes
- Familiarity with kitchen sanitation and safety regulations
- Excellent organizational, communication skills
- Conflict management abilities
- Ability to manage and motivate a team in a fast-paced work environment
- Flexibility to work during evenings and weekends
- Positive attitude and stamina
- Good Customer Service
- Attention to Detail
It would be advantageous in this position for you to have the following capabilities:
- Proven experience in managerial kitchen post
- Previous kitchen experience in a similar role
- Knowledge of Italian dishes
- creativity on elaborate new dishes and often specials
- Knowledge of a wide range of recipes
- Great Food hygiene
- Knowledge of current food trend
