Purpose of the job

To manage all aspects of kitchen operations to ensure that it runs efficiently and effectively. To maintain a food cost in line with budget expectations.

Key Tasks and Responsibilities

·  Oversee kitchen operations to ensure efficient operations.

·  Ensure that products served to customers are of a high standard, adhere to the brand recipes, and are     served within the least amount of time.

·  Oversee all production ensuring that all stock is strictly controlled, and that wastage is minimized.

 

 

·  Ensure all stock control systems are implemented and that the restaurant achieves the required food cost.

·  Train and coach kitchen team members.

·  Responsible for shift schedule to include: work station assignments/rotations, employee training, employee   vacations, employee breaks, overtime assignment, back-up for absent employees, and shift rotations.

·  Coordinate kitchen startups, shutdowns, and changeovers.

·  Management staff time tables in line with labour cost budgets

·  Schedule and conduct shift meetings.

 

 

·  Responsible for quality control.

·  Maintain operational standards in accordance with brand standards.

·  Ensure that all stock items for which you are allocated responsibility for by management balance with sales from the Point of Sale system.

·  Ensure that all kitchen team members adhere to the timetable, and are punctual at all times.

·  Ensure that the attendance registers are completed before and after each shift, and to notify the assistant manager / branch manager of any absenteeism.

·  Ensure that only the freshest ingredients and products are served to all customers at all times.

 

 

·  Notify management of any low stock levels before they run out.

·  Ensure that all recipes, formulas and processes are strictly adhered to.

·  Manage the stores stock levels according to laid down procedure (receiving, stock control and stock takes)

·  Ensure that the daily cleaning duties are assigned, monitored and completed.

·  Ensure the sound practice of all current industry hygiene principles.

·  Ensure that all equipment and property is kept clean, well maintained, serviced and treated with the utmost care and respect by all team members at all times.

·  Cultivate open and honest working relationships with your co-workers and managers.

 

 

·  To conduct daily pre-shift meetings with you team members to brief them on daily activities (prep and cleaning duties)

·  To ensure that dress code regulations are adhered to.

·  To inform management immediately of any staff issues.

·  Other duties as assigned.

 

Key Performance Measures

– Achievement of sales budgets

– Achievement of food cost targets

 

 

– Mystery Customer feedback ratings must be in accordance with MSO requirements and targets

– Achievement of Operational Standards and evaluation ratings as required.

– Achievement of required appraisal scores

Experience Required

– producing good food in the shortest time (“managing the pass” which is essentially coordinating the preparation of orders from the respective sections in the kitchen and getting the food on the plate from the sections at the same time, as quickly as possible),

 

 

– understanding the flows and workings of the different departments in a kitchen,

– being able to manage staff,

– control stock using the necessary systems (minimising the risk of theft)

– understanding the principles of managing cost of sales.
