JOB SUMMARY

We are seeking a passionate and skilled Demi Chef to join our culinary team, operating in a unique and dynamic camp and safari setting. The ideal candidate will have a strong foundation in culinary arts and a passion for creating exceptional dining experiences in a remote environment. Working closely with the Head Chef, you will be responsible for preparing high-quality meals that meet the expectations of our discerning guests while adapting to the logistical challenges of a safari operation.

KEY RESPONSIBILITIES

• Assist the Head Chef and other senior culinary team members in the preparation, cooking, and presentation of all meals (breakfast, lunch, dinner, and special events).
• Maintain the highest standards of food quality, freshness, and presentation by following established recipes and culinary guidelines.
• Ensure all food preparation and storage areas are clean, sanitary, and organized in accordance with health and safety regulations.
• Manage daily mise en place, including preparing ingredients, stocks, sauces, and other components required for service.
• Monitor food stock levels, assisting with inventory counts and communicating supply needs to the Head Chef.
• Operate and maintain kitchen equipment safely and efficiently.
• Work collaboratively with the entire kitchen team to ensure a smooth and efficient workflow during service.
• Adapt to a flexible schedule and changing menu requirements based on guest preferences or supply availability.
• Assist in creating special menus for themed dinners, picnics, and bush breakfasts as required.

• Knowledge of food safety standards and proper sanitation procedures.
• Ability to work effectively and remain calm under pressure in a fast-paced environment.
• Strong team player with excellent communication and interpersonal skills.
• Flexibility and adaptability to the unique requirements of a remote, safari-based kitchen.
• A genuine passion for food and a desire to deliver outstanding guest service.

QUALIFICATIONS & REQUIREMENTS

• Proven experience as a Commis Chef or a similar role in a professional kitchen environment.
• Formal culinary qualification or training from a recognized institution.
• Solid understanding of kitchen operations, food preparation techniques, and culinary terminology.
