Chobe River Lodge Kasane Specialist Lodge Manager Role Purpose: For a boutique 4 star lodge in Kasane, catering to a refined high net worth target audience. The candidate is required to have extensive knowledge as a Maitre d’hotel, fine dining and general management. The ideal candidate should have food & beverage experience at Management level, as well as have excellent award winning front of house management experience. Preferably a minimum of 4 years General Lodge Management.
Key Responsibilities
- preparing food and training kitchen staff
- cater and interact with higher net worth individuals
- Administration in particular record keeping, stock taking, food costing and menu planning, taking into account seasonal produce.
Requirements
- Minimum of 10 years’ experience preparing food and training kitchen staff
- Have extensive knowledge to cater and interact with higher net worth individuals
- Have extensive experience and a diploma Sommelier, professional chefing and/or Maitre d’hotel.
- Must have extensive experience with hospitality computer systems.
- Must have a strong penchant for Administration in particular record keeping, stock taking, food costing and menu planning, taking into account seasonal produce.
- Must have a valid driver’s license.
- Must have knowledge of international hygiene standards.
- High School Diploma
- Work experience and knowledge of Botswana
- Diploma or similar in Professional chef
