COMMIS CHEF – Protea Hotel

Protea Hotel by Marriott Masa Square is inviting suitably qualified candidates to apply for the following position:
JOB TITLE: Commis Chef
REPORTING TO : Head Chef
Main Responsibilities
⦁ Ensure that all dishes are cooked well and presented in an aesthetically pleasing way
⦁ Preparing meal ingredients, which includes seasoning of different meats as well as washing, peeling, and chopping vegetables and fruits
⦁ Receiving deliveries and verifying that all ordered items have been delivered and are of good quality
⦁ Ensures freshness and suitability of products used by the section and that they are stored properly
⦁ To report any issues with food quality and freshness to the Sous Chef.
⦁ Ensure that Kitchen surrounding work surfaces and floor are kept tidy and clean at all times.
⦁ Discarding all expired and spoiled food items stored in the stock rooms, refrigerators, and freezers.
⦁ Taking inventory of restaurant supplies and notifying the supervisor of low or depleted supplies
⦁ To communicate with Sous Chef on regular basis regarding all stock levels.
⦁ To keep stock usage, wastage, loss and breakages in the kitchen to a minimum level and record accordingly.
⦁ Reports any equipment on the section which needs repair or maintenance
⦁ Ensure full adherence to Company Food Hygiene. Health and Safety processes and procedures
⦁ To perform any other related duties assigned to you by Management
Qualification and Experience required
⦁ Diploma in Culinary Arts from a recognized institution.
⦁ Minimum of 1 years work experience in the hospitality industry
Skills and Competencies required
⦁ In-depth knowledge of kitchen safety and health regulations
⦁ Thorough attention to detail and excellent time management
⦁ Ability to work under pressure
⦁ Ability to communicate with the Kitchen Managers. Cooks & Customers
⦁ Able to work without supervision
