EXECUTIVE SOUS CHEF – CRESTA MARAKANELO LIMITED

DESCRIPTION 
Cresta Marakananelo Limited operates 11 hotels in Botswana with the Head Office based in Gaborone.
Applications are invited from suitably qualified, experienced and results-orientated candidates for the position of Executive Sous Chef.
SCOPE OF WORK
We are searching for a creative and motivated Executive Sous Chef to join our talented kitchen team. In this position, you will act as the second in command in our kitchen, following and enforcing our executive chef’s requirements and guidelines. Our ideal candidate is a creative professional who is willing to participate in creating delicious seasonal menus and meal designs.
ROLES AND RESPONSIBILITIES
⦁ To ensure that all menus are constantly updated, paying attention to seasonal availability.
⦁ To maintain all stock levels in the department to the required minimum standards.
⦁ To ensure that expenses are within budgeted limits.
⦁ To ensure that staff maintains a high standard of personal and work hygiene.
⦁ Manage and control all food outlets in the hotel in accordance with the established standard operating procedures.
QUALIFICATIONS AND EXPERIENCE
⦁ Degree or Diploma in Culinary Skills or a related field
⦁ A minimum of 4 years of experience in a similar role
COMPETENCIES
⦁ Versed on the calculation of food cost.
⦁ Ability to create new menu items.
⦁ Incredible food preparation abilities
⦁ Ability to manage an entire kitchen
⦁ Good communication skills
