EXECUTIVE CHEF – HOTEL:430 (Pty) Ltd

Hotel 4:30 (Pty) Ltd is seeking to appoint an experienced, creative and highly professional Senior Executive Chef to lead and oversee our culinary operations. We are looking for an accomplished culinary professional with a minimum of 20 years’ proven experience in the hospitality and culinary industry, preferably with extensive experience in luxury hotels, fine dining, restaurants and large-scale food operations.

Key Responsibilities

  • Lead and manage the entire kitchen and culinary department.
  • Develop innovative menus incorporating international and local cuisine.
  • Maintain consistently high standards of food quality, taste and presentation.
  • Manage food preparation and kitchen operations for restaurants, banquets, events and other hotel outlets.
  • Recruit, train, mentor and supervise chefs and kitchen staff.
  • Implement effective food-cost, stock-control and wastage-management systems.
  • Ensure compliance with food safety, hygiene and HACCP standards.
  • Manage kitchen budgets, purchasing and supplier relationships.
  • Introduce new culinary concepts and continuously improve the hotel’s dining experience.
  • Work closely with the General Manager and Food & Beverage Department.
  • Develop and implement training and localisation programmes for the culinary team.
  • Ensure efficient kitchen operations while maintaining the highest standards of luxury hospitality.

Requirements

  • Degree in Bachelor of Commerce, Tourism and hospitality management
  • Minimum 20 years’ proven experience in the culinary/hospitality industry.
  • Extensive experience as an Executive Chef, Head Chef or equivalent senior culinary position.
  • Relevant culinary qualification from a recognised institution.
  • Proven experience in luxury hotels, fine dining or high-end hospitality.
  • Strong leadership, management and communication skills.
  • Excellent knowledge of international and local cuisine.
  • Strong understanding of food costing, budgeting and kitchen controls.
  • Knowledge of HACCP, food safety and hygiene standards.
  • Ability to train, mentor and develop junior chefs and local employees.
  • Creative, innovative and passionate about delivering exceptional culinary experiences.
  • Ability to work under pressure and manage a large culinary team.
  • Excellent organisational and problem-solving skills.
